I created this bento with the thought that since I was supposed to go on a long drive today to pick something up at work, I would be on the road at lunch time and needed easy foods to pick up with my fingers. Turns out I didn't have to go out after all, but this was still good.

Since I had yesturday off, I spent all day baking and cooking some dishes for this coming week. This was one of them, a hash brown and corn casserole. I also found some golden raspberries at the local market. They are sooooo sweet and tasty!

This weekend, since the zucchini pie had been totally eaten! I made a winter squash, golden raisin and pine nut lasagna!!! This lasagna is amazing, and my husband likes it this time around because there are no onions lol. It is truly a hearty, low fat, low cal nice winter dish that is a fast and fun thing to make!

I baked some killer Zucchini pie my friend gave me a recipe for last night. It was so good except my husband hates onions, so he couldnt eat it. Thats okay, more for me.

I found this purple bell pepper at a co-op grocery market last night called "Rainbow" (fitting huh?)... Anyways, it looked interesting, so I purchased it and will try it with lunch today. Hope it tastes good.

I have been to busy to make bentos at the beginning of this week. Finally, back to normal again today. I want to start clearing out more of the freezer, so i added Gardenburger riblets to todays bento.

I made these really good baked stuffed tomatoes last night for dinner. This is a leftover one from last night. They have steamed corn, peas, veggie crumbles, chicken rice and tomato innards inside them, and covered with parmasean cheese! I didn't use a recipe for them, I just threw it together and hoped it tasted good lol.

I've been sicker then a dog this past week. We went to the Sea Ranch near Sausilito this weekend and rented a super posh house, we have had it planned for like 3 months. This cold wasn't planned though! Thank god the house had a pool table, air hockey table, king sized beds with memory foam mattresses, 3 HUGE high def TVS in every room, 2 shower heads in the spa shower, deluxe jacuzzi and some other amenities which I'm sure I'm forgetting right now ;) It wasn't SO bad I had a horrible cold. We DID walk down to the beach on Saturday and run in the ocean and play in the sand. Jack even found some star fish and scared me with them. So anyways, yesterday I ate soup for lunch (no bento), but I tried to make a healthy bento today.

Mmmm i got these twice baked potatoes yesturday that you pop into the microwave and heat up. Seemed like a good fast bento thing. Also, I haven't tried this yellow cauliflower yet, wonder how that will taste.

I got this polenta at Trader Joe's. It was low in calories and taste great when grilled in a pan! We had it for dinner last night, but I thought it would make a good lunch too.

Mmmmm brussel sprouts, I LOVE brussel sprouts! This lunch looks great and is packed with protein... and an added bonus was it was SUPER FAST to make, unlike yesturday where I must have spent like 366 days in the kitchen to make my bento. I love when it goes good!

Omg, have you ever had one of those mornings where NOTHING goes right??? This "Seemingly Simple" bento box took me practically one fucking HOUR to make not to mention the time I spent washing dishes after. *SIGH*... I had to try out like 15 bentos to find one that fit everything to my liking, and after I'd try out a bento, it would be dirty so I would have to wash it. AND I TRIED 4823423 OF THEM! Then this stupid asian pasta salad had the nutritionals all wrong, so I had to pull out the food scale and weigh it ect.. (I like to know how many calories I am eating in each bento)... THEN the knives kept falling on the ground and almost cutting my toes off. It was frigging lame. Hope this at least tastes good.
